Crepes Gone Bad

Crepes they may not be nutritious but they sure are delicious. They were one of the key elements of my birthday breakfast. I thought I’d pull out the video camera and capture the action and sure enough some of them didn’t quite make it. Check out crepes gone bad.

They may not be nutritious, but crepes sure are delicious.

Crepes – What?

Crepes are basically incredibly thin pancakes. I’ve loved them since I was a kid. My parents started it years ago by bringing me to a restaurant in downtown Minneapolis, MN called the Magic Pan. I was amazed, see even back then I was drawn into the process of creating. They used an upside down pan to make the crepes.

Sure enough my parents bought one. Through the years, and cough decades, we’ve enjoyed making crepes on that same pan. The pan that has now made it into our cupboards. The pan that came out for my birthday.

The key to this pan is that it is domed and is used upside down. To make the crepe you heat the pan, then quickly dunk the cooking surface into a shallow bowl of batter. The batter, a thin layer of batter, sticks to the surface ready to be cooked.

Return the pan to the stove and cook. Amazing … in theory. But sometimes in the process you end up with crepes gone bad.

Crepe Recipe

I opted for the first and most popular recipe that I could find when searching. Then I let the influence of my grandmother take over … add more of this and some more of that to get it right.

The Basic Crepe Recipe that we started with from All Recipes was:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

I didn’t follow their steps. Instead I beat the eggs, added the milk and water, then added the flour, salt, and butter. After that I added water and milk in equal parts until the consistency was right.

Then the fun began. The process sounds simple enough, but the temperature of the pan, the amount of oil, and the amount of time the pan is in the batter all affect if the crepes turn out of if you end up with crepes gone bad.

So next time you want to try something different for your breakfast give crepes a shot. Hopefully you’ll have more that go well instead of crepes gone bad. We made strawberry and raspberry sauce to put over them for an incredible meal.
